Founder/Owner
Chef Patti Hollenberg
Patti Hollenberg is the Owner and Executive Pastry Chef of Chess Piece Pâtisserie. She holds a double degree in Culinary and Pastry Arts from the Culinary Institute of Canada and sits on the Culinary Advisory Board of the school as well as a sitting member of the Downtown Fredericton Inc. Advisory Board.
Patti spent close to 10 years honing her craft in Western Canada, but as a native of Miramichi, New Brunswick, she always had a dream of moving back to the East Coast and opening a business in her home province. In July 2014, her dream came to fruition when Chess Piece Pâtisserie and Café opened in Downtown Fredericton. With the help of article mentions online from Buzzfeed and Huffington Post, Chess Piece became more than just a local favourite and was even featured on a Food Network Canada TV show called “The Baker Sisters”. The accolades have continued to roll in, including recognition from the Fredericton Chamber of Commerce with its Start Up Award in 2017, and in 2018 Pattie was awarded First Time Entrepreneur of the Year from CBDC.
Fast forward to 2021, the business grew to include 2 locations at the newly renovated Fredericton International Airport, a seasonal house-made ice cream truck that operates as Queen Street Creamery, and the newest addition of Chess Piece Market beside our original location on Queen Street, which is the only cheese market in Fredericton to operate 6 days a week.
Aside from her passion for all things food and showcasing local produce, Patti enjoys spending time walking her two Old English Sheepdogs, Spencer and Hamish to local patios, DIY renovations, and swimming.

Katrina Jones
Sous Chef
Katrina was born and raised in Temperance Vale, New Brunswick. After graduating from Nackawic High School in 2014, she enrolled in the Culinary Arts at the Culinary Institute of Canada (Holland College).
From there, she interned at Castle Leslie in Ireland, worked at The Algonquin in St. Andrews, NB, Fogo Island Inn, Fogo Island, NL, and The Provincial Gastro Lounge. Katrina loves to cook simple, wholesome food that you would find in your grandmother's kitchen.
She strives to connect with people through food and make each experience memorable.
